It is important to remember that milk destined for powder production has to be skimmed before it can be transferred to a drying tower. If any cream remains in the milk, it will block the drying tower nozzles in a matter of moments. Cream is passed down a different line to be sterilised and at the end of the process, cream will be added back into the powder to make whole milk powder (WMP) or semi-skimmed powder or it can be packed directly as skimmed milk powder.
